We love comfort food! Who doesn’t? A warm dish on a cold night, something that just screams comfort and childhood. mmmmmmm. So since it has been unusually cold here, we decided last night was a great night to make some homemade Mac and Cheese. Since I am pregnant, we have been trying to eat healthy, but we made an exception last night 🙂
We looked for a recipe, but after looking at a few, I decided to combine them. Personally, I find shaped pasta tastes better for mac and cheese, so we used mini wagon wheels, but any pasta works for this dish. I also don’t measure things very often, so the measurements are approximate.
3 Tablespoons butter
3 Tablespoons flour
1 1/2 C 2% Milk
2 C sharp cheddar cheese
dash of Nutmeg
1/2 Tablespoon Caynne Pepper
1 Tablespoon Paperika
1 LB cooked pasta
1 C Sharp Cheddar cheese
In a large pot, melt butter over medium heat. Once fully melted, whisk in flour. whisk until fully cooked, about 3 minutes.
Slowly whisk in milk. Turn heat down to med/low. Let bubble and thicken, staring occasionally. Stir in 2 C of cheese, one handful at a time. Add in spices.
Mix in cooked pasta. Turn off heat. Add the last cup of cheese, and mix throughly.
